- 8 cups of Low-Fat Vanilla Yogurt
- 4 Cups of Unsweetened Orange Juice
- 4 Cups of Peterson Original Unsweetened Applesauce
Instructions
- Combine yogurt and orange juice in an 8 quart (or larger) measurement-marked storage container; stir until well mixed.
- Add applesauce, 2 cups at a time, stirring until smooth.
- Verify mixture yields 4 quarts (16 cups) so each serving contains 1/2 cup fruit; add applesauce as needed to yield 16 total cups and stir.
- Portion 8oz into 9oz serving cups; place lids on cups and serve chilled; refrigerate if not serving immediately. May also refrigerate overnight.

Instructions
- Place a rack in the center of your oven.
- Preheat the oven to 350° Fahrenheit for 20 minutes before baking.
- Line a 12-count muffin pan with liners and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
- In a large bowl, whisk together the sugar, oil, applesauce, and eggs until smooth.
- Stir in the zucchini.
- Add the dry ingredients to the wet, and stir gently to combine. Do NOT overmix.
- Fill each muffin cup ¾ full with batter.
- Bake for 22–25 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool for 5 minutes in the pan before transferring them to a cooling rack.

- 17 pounds granulated sugar
- 9 pounds, 3 1/4 ounces all-purpose white flour
- 10 pounds all-purpose whole wheat flour
- 1/2 cup iodized salt
- 1 1/2 cup baking powder
- 1 cup baking soda
- 2 quarts vegetable oil
- 2 quarts Peterson Farm Treats Applesauce
- 12 quarts frozen blueberries
- 1 cup lemon extract
- 2 quarts, 1 pint lemon juice
- 1 1/2 cup lemons (for zest)
- 8 quarts vanilla yogurt
- 6 quarts whole eggs
Instructions
- Measure and add all dry ingredients to mixer bowl fitted with the paddle attachment. Mix on low (1) for 3 minutes.
- Add yogurt, egg, oil, and applesauce. Mix on low until ingredients are mixed in. Then, add the lemon juice, lemon extract, and lemon zest. Mix on low for 8 minutes. Stop and scrape down sides and around paddle. Mix on low for another 5 minutes (all ingredients should be thoroughly mixed together).
- Add frozen blueberries. Mix on low just until the berries are mixed in.
- Scoop 10 pounds batter onto a lightly greased sheet pan. Recipe should make 9 full sheets.
- Bake at 325* for 28 minutes.
- Cut in to 40 squares, and dust bread with powdered sugar before serving.

- Combine milk, yogurt, applesauce, cinnamon, maple syrup and salt in a large mixing bowl. Stir in rolled oats. Cover and refrigerate overnight.

- 6 cups (48 fl oz) 1% milk
- 8 cups (1120g/2 ½ lbs) frozen sliced bananas
- 4 cups (560g/1 ¼ lbs) frozen strawberries
- 12 cups (756g) Peterson Farms Mixed Berry Applesauce
Instructions
- Working in batches, add 3 cups milk, 4 cups bananas, 2 cups strawberries and 6 cups of applesauce to a 1-gallon blender to make 12 servings. Blend until mixture is completely smooth and creamy, about 2 to 3 minutes.
- Add 8 fl. ounces smoothie to individual cups and serve immediately, or cover and refrigerate until ready to serve.
- Repeat Step 1 to prepare the remaining 12 servings.

- 48 ounces (3 pounds) Peterson Farms Apple slices, chopped
- 1 tablespoon granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon ground cinnamon
- 2 cups (226 grams) whole wheat flour
- 1 cup (120 grams) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 2 tablespoons granulated sugar
- 1 teaspoon kosher salt
- 2 large eggs
- 1 ½ cups (12 fluid ounces) low-fat buttermilk
- 1 ½ cups (12 fluid ounces) 1% milk
- ½ cup (4 fluid ounces) vegetable oil
- 2 tablespoons powdered sugar, for serving
Instructions
- Preheat oven to 425°F. Spray a half sheet pan with nonstick baking spray, then cover with parchment.
- Toss chopped apples with sugar, cornstarch and cinnamon. Spread out on prepared sheet pan and bake for 20 minutes, stirring once halfway through baking time.
- While apples bake, prepare the pancake batter. Whisk the whole wheat flour, all-purpose flour, baking powder, baking soda, sugar and salt together in a large bowl. Beat the eggs, buttermilk, milk and oil together in a separate bowl. Add buttermilk mixture to flour mixture, folding ingredients until just combined.
- Remove sheet pan from the oven, stir the apples, then spread them out in an even layer. Spread batter in an even layer over the apples, then bake in preheated oven until golden brown and a toothpick inserted into the center of the pancake comes out clean, about 12 to 15 minutes.
- Let cool slightly before dusting the top with powdered sugar and cutting pancake into 3x3-inch squares.

Ingredients
- 15 each (360 grams) pitted dates
- 3 ¾ cups water, divided
- 3 (15 ounce) cans drained cannellini beans
- 1 ½ cups (126 grams) unsweetened cocoa powder
- 1 tablespoon (14 grams) vanilla extract
- ¼ cup + 2 tablespoons (117 grams) maple syrup
- ¾ cup (133 grams) mini chocolate chips
- 24 (2 ounce) bags Peterson Farms Red Apple Slices
Instructions
- Add dates to a bowl and cover with 3 cups warm water. Cover and soak for 10 minutes. Drain.
- Combine the soaked dates and remaining 3/4 cup fresh water in a food processor, and process until finely chopped. Scrape down the sides of the bowl and add beans, cocoa powder, vanilla, maple syrup and salt. Process until completely smooth, stopping to scrape down the sides as necessary, about 2 to 3 minutes.
- Serve ¼ cup dip, garnished with mini chocolate chips, with one (2 ounce) bag of apple slices.
